I love fried brussels sprouts as gourmet bar food. But they are not ideal, as they fried in yucky oil. So here's a paleo version that you'll love.
Fried Brussels Sprouts with Asian Dipping Sauce
1 pound Brussels Sprouts, quartered
In a medium skillet, melt enough coconut oil to reach 1/2" up the side of the pan. Bring the oil to 350º, over medium high heat. Add the brussels sprouts in a single layer. Watch out! These things are going to spatter all over your face. I just threw a giant paper plate over the whole shabang to protect myself. I removed the plate when the sprouts settled down a bit. Fry until crispy and golden brown, stirring often, about 6-8 minutes. Remove brussels sprouts with a slotted spoon to drain on a plate lined with paper towels.
1/2 cup water
1/4 cup coconut aminos
1 Thai chile, sliced thin
1 inch piece of ginger, minced
1 clove garlic, minced
1 teaspoon arrowroot starch
1 teaspoon sesame seeds, for garnish
Bring all the ingredients to a boil in a small saucepan. Reduce to a simmer for 5 minutes, whisking well to combine. Serve with the brussels sprouts. Garnish with sesame seeds.
