COCOA NIB PUDDING -- PALEO TREATS

Best paleo chocolate pudding

While trying to make Paleo fudgcicles, this pudding happened. I think you could still freeze these into fudgcicles, but we didn't make it that far.  Both of my boys had the same reaction to this stuff, "Mom, this just makes me happy." I will make this again and again. Make sure your avocado is perfectly ripe-- not overripe and certainly not under. I use SoDelicious brand vanilla coconut milk. If you only have regular coconut milk, just add a splash of vanilla extract. You can certainly sweeten this with honey or maple syrup if you want. I did not. Raw cocoa nibs can be found in the bulk section of some natural grocery stores, and definitely in the aisles of Whole Foods. 

Cocoa Nib Pudding
serves 4
1 large ripe Haas Avocado
2 cups vanilla coconut milk
1/4 cup raw cocoa powder
1/4 cup raw cocoa nibs
1 teaspoon cinnamon
1/4 teaspoon salt 

Blend until smooth in a blender. Serve chilled.

  1. How does this thicken? It looks like a miracle. Do you think it would taste good without the cocoa?
