I've made this salad before, and I posted it a long time ago. However, like many things, practice makes perfect. While I did not change the recipe for the dressing, I found that the less you add on top, the better. Radishes are the perfect crunchy topping to this salad. You don't need another thing. I hope you enjoy the new photos, too.
Fresh Texas Fig-Poppyseed Salad
3 Tablespoon Fig-Poppyseed Dressing (Recipe follows)
6 cups mixed baby greens
4-5 radishes, sliced thin
4 figs, chopped
Toss dressing with baby greens. Top with sliced radishes and figs to serve.
makes about 1/2 cup
5 fresh figs (I used black mission)
3 Tablespoons coconut milk
1 1/2 Tablespoons olive oil
2 teaspoons apple cider vinegar
1 Tablespoon fresh lime juice
1 teaspoon poppyseeds
1 teaspoon salt
pepper to taste
Whirl it all up in a food processor or blender until smooth. Massage into lettuce leaves to serve.
