PALEO COCKTAILS: MEXICAN CHOCOLATE MARTINI

Cavemen didn't drink martinis. But I do.
Paleo Cocktails. Don't even get me started. I assume I will get some comments on this one telling me all about the negative effects of alcohol; how it isn't paleo; they didn't have bars in caves; yada yada. Too bad. I wrote a recipe for a paleo martini and you are just going to have to deal with it. I was inspired by my own recipe for Mexican Chocolate Pecans when I wrote this. My husband and I were craving them last night but didn't have all the ingredients. Then I thought, "What if we could make this into a drink!??" He doubted. I decided we'd have to try it out to make a judgement and I prevailed! It was delicious. It is 10:00 am and I am considering pouring myself another one. But cavemen certainly didn't drink before noon...



Mexican Chocolate Martini
serves 1
For the rim:
Vanilla powder, salt
For the drink:
1 ounce rum
1 1/2 ounces coconut milk (I use SoDelicious unsweetened)
1/2 tsp raw cocoa powder
1/8 tsp vanilla extract
1 pinch cinnamon
1/2 pinch cayenne pepper (or more to taste)

Combine equal parts vanilla powder and salt and spread on a plate. Wet the rim of your martini glass with water and dip in the vanilla salt mixture. Set aside to dry.

In a cocktail shaker, add the remaining ingredients. Fill the shaker to the top with ice and shake away. Strain into your rimmed glass. Enjoy!
