Get ready for a bit of culinary genius. I have been wanting to try this recipe for a long time, but I couldn't quite figure out what to pair it with. Then it hit me-- Lamburgers and Sweet Potatoes. Boy did it taste good. You can pick up most of the ingredients for this in the olive bar at the grocery store. You may see these ingredients and think "How weird..," but trust me, this was an experiment gone right. The avocado absorbs the mediterranean flavors perfectly. Serve with lamb!

Greek Guacamole
2 Avocados, mashed
2-3 artichoke hearts, chopped
1 roasted red pepper, chopped
6 Kalamata Olives, chopped fine
1 Tbsp capers, drained and chopped
2-3 cloves garlic, minced
2 Tbsp fresh flat leaf parsley, minced
2 Tbsp fresh basil, minced
1-2 tsp red pepper flakes
3 Tbsp red onion, minced

Combine all ingredients gently in a bowl. Serve with sweet potato chips.

Sweet Potato Chips
2 Sweet Potatoes, sliced thin on a mandoline
2 c. coconut oil

Soak sweet potato slices in ice water for one hour. Drain and lay out to dry on paper towels. In your cast iron skillet, heat coconut oil over medium high. Fry the sweet potatoes in batches until golden brown. Drain on paper towels to absorb excess oil. Sprinkle with salt and serve with Greek Guacamole.
