BISON LAMB HERB SLIDERS
LAMB/BISON HERB SLIDERS
makes 8-10 sliders
1/2 lb grass-fed ground lamb
1 lb grass fed ground bison
2 Tbsp each: rosemary, basil, parsley, garlic, and red onion (all minced)
2 tsp kosher salt
1 tsp coarse black pepper
1 tsp red pepper flakes
Gently combine all ingredients in a bowl with your hands. Be careful not to over work the meat, as it will become gummy. Ew. Gently form into 8-10 patties. Grill to medium rare (or to your liking).
I wrapped mine in green leaf lettuce, topped with tomato, red onion, greek guacamole, roasted red peppers prosciutto and tapenade.

I also served this with sweet potato chips fried in coconut oil with a greek guacamole. Recipe coming soon.
