I usually do not condone these things. Since the paleo challenge is over for my husband, there are a few things he is after. One of those is the granola bar. I could have let him go back to the quaker bars that are really just glorified candy bars or I could take matters into my own hands. If he is going to be eating granola bars, I want to be the one behind the ingredient list. These were a hit. I wrapped them individually and stuck them in the freezer so I could put them in my son's lunch, too.

No Bake Raw Granola Bars

1/2 c Sunbutter (or nut butter of your choice)
1/2 c honey
1/2 tsp vanilla extract
1 1/2 c organic rolled oats
1 c. Perky's Crunchy Flax cereal (or cereal of your choice)
2 Tbsp milled Flax seed
1/2 cup shredded coconut
1 tsp salt
1/2 tsp cinnamon
1/4 cup mini chocolate chips
1/2 c dried cherries

Line a 9x11 dish with wax paper. In a small sauce pan, combine Sunbutter and honey. Heat until melted through and pourable. Remove from heat and stir in vanilla. Set aside. In a large bowl, combine oats, flax cereal, flax seed, coconut, salt and cinnamon. Stir the sunbutter and honey mixture into the oat mixture. Stir in chocolate chips and cherries. Spread mixture into prepared dish. Press down evenly. Refrigerate until set. Cut into bars and wrap individually in plastic wrap. I store mine in the freezer for an easy, grab and go snack!
