
1 lb pork chops
1/2 c pineapple juice
1/4 c tamari or soy sauce
1 heaping Tbsp Sambal
1/2 onion, minced
3 garlic cloves, minced
1/2 tsp cumin
1/2 tsp salt
1/2 tsp black pepper
1/2 c chicken broth
Whisk together the pineapple juice, soy sauce, Sambal, onion, garlic, cumin, pepper and salt. Add pork to the mixture and marinate in the refrigerator 3 hours. When ready to go, light the grill. Remove the pork chops from the marinade, reserving the liquid. Grill over medium high heat until pork is cooked through. Meanwhile, add the marinade to a small saucepan. Add the chicken broth. Bring to a boil. Reduce the sauce to a simmer until it has reduced and thickened slightly. Serve over pork.
