Get ready for a delicious lunch. It takes 2 minutes to put together and it is so full of protein and healthy fats it will make your head spin. I fry a few slices of bacon early in the week and add it to lunches like this, in breakfasts or on salads. You could also add some hard boiled eggs to this if you wanted. I used to love BLT sandwiches, but I haven't had one since I was pregnant with my son. I used to crave them all the time. That and PB&Js. Oh well, I like them this way so much better. It is so strange how your body adjusts to the way you treat it. I have absolutely no desire to eat bread anymore. How about you? What non-paleo food do you crave? Salmon Avocado BLT
1 (2.6 oz) pouch salmon
1 Tbsp Paleo Mayonnaise (or more to taste)
1/4 tsp kosher salt
1/4 tsp coarse cracked pepper
1/4 avocado, chopped fine
2 tomato slices
2 outer leaves of butter, green leaf or romaine lettuce
1 slice of bacon, pan fried and halved
Mix the salmon, mayonnaise, salt and pepper together in a bowl. Gently fold in the avocado. Divide mixture between the lettuce leaves. Top each with tomato slices and bacon. Roll up and take a big, crunchy bite.
