CHEDDAR CHIVE WAFFLES

Just so we are clear, these are NOT paleo. I am currently taking on the role of "mom" for my teenage brothers-in-law while their parents are out of town. Damn these boys can eat! So tonight we had Pozole, which I'll post tomorrow, and these waffles. These also go really well with a good chili. Enjoy! 


Cheddar Chive Buttermilk Waffles
makes about 12 (4") waffles
1 3/4 c. AP flour
2 tsp baking powder
1/4 tsp baking soda
2 tsp sugar
1 tsp garlic powder
1 tsp salt
3 eggs
12 Tbsp butter (1 1/2 sticks), melted
1 1/2 c buttermilk
2 stalks green onions, minced
1 jalapeno, minced (optional)
3/4 c shredded cheddar
coarse sea salt

Preheat your waffle iron. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, garlic powder and salt. In another medium bowl, whisk the eggs, butter and buttermilk. Make a well in the dry ingredients bowl and pour in the egg mixture. Whisk to combine. Stir in the green onions and jalapenos, if using. As you prepare your waffles on your iron, evenly sprinkle cheese, then a pinch of sea salt, over the batter before closing. Prepare as you normally would!
