MY PALEO BREAKFASTS

I eat eggs every single day. I know that sounds pretty boring, but I am here to assure you that it is not. I don't even like eggs that much. I hate the way yolks taste. I remove them from hardboiled eggs. But I keep at least one in my morning eggs because it where all the good nutrition is. So here is the game plan. Every morning I wake up, I pull 3 eggs out of the fridge. I pull the coconut oil from the cabinet. Finally, I pull out whatever I have leftover from dinner the night before.  I create what I call the "Basic Paleo Omelet."


The Basic Paleo Omelet (BPO)
1 free range organic egg
2 egg whites
1 Tbsp water
1 tsp coconut oil
Salt and Pepper

Whisk egg, egg whites and water together. In a small skillet, cook in coconut oil to your liking. Add salt and pepper to taste. I mix in last night's dinner to add protein, vegetables and fat for a paleo-balanced breakfast. See how I did it:

Green eggs and Ham:

BPO 2 oz. leftover ham 

Spicy Pulled Pork Scramble:

BPO + 2 oz. pulled pork + 1 Tbsp chopped scallions + Pickled Jalapenos + 1 Tbsp Salsa
Pulled Pork Omelet:
BPO + 2 oz. Pulled Pork + 2 Tbsp Avocado Dressing
Indian Omelet:    BPO + 1/2 c leftover Indian Spiced Spaghetti Squash
Pizza Omelet:
BPO + Leftover ingredients from Paleo Pizza (tomato, pesto, pepperoni, olives, etc)
Steak and Eggs: BPO + 2 oz. leftover dry aged ribeye+ 2 Tbsp Walnut pesto
