Oh yeah, you saw that right. I said carrot french fries. These easy peasy roasted carrots are so sweet and crunchy-- so much so that you can convince anyone that they are really sweet potatoes. And by anyone, I mean your veggie-hating children. I have to give credit to my husband and America's Test Kitchen for this one.
1 lb carrots, peeled and cut into matchsticks
2 Tbsp grass-fed butter, melted
1 tsp coarse salt
Preheat the oven to 425º. Mix melted butter and carrots in a large bowl. Spread carrots on a foil-lined sheet tray in one even layer. Sprinkle with salt. Cover tightly with foil. Bake for 15 minutes. Remove top foil and return to oven. Bake 25-30 more minutes until the carrots look like french fries!
