Tonight, I went to work and left the cooking and blogging to my husband. He did a wonderful job of documenting the process. Our dinner was damn delicious and everyone was, once again, very happy.
We had a delicious new wine I was able to bring home from work today. It is a 60% Malbec/40% Cabernet Sauvignon blend called Staccato. It went very well with the pork.
The main course was adapted from a recipe I found on KeyIngredient, which is the best free recipe app on my iPad in my opinion. It is Paleo and the pork was unbelievably tender and delicious. I highly recommend trying this one.
Red Wine Pork Tenderloin
1 pork tenderloin, cut into 8 pieces
1/2 c red wine
1/2 c chicken stock
1.5 Tbsp Whole Grain Mustard
1 tsp salt
1 tsp pepper
1 Tbsp lemon juice
1.5 tsp cumin
2 Tbsp Worchestershire
4 cloves garlic, minced
For 3 hours, marinate the pork in the refrigerator in the ingredients listed above.
After 3 hours, remove the pork, reserving the marinade and place the pork medallions on a foil-lined sheet pan. Preheat the broiler. Add the marinade to a small saucepan and bring to a boil. Reduce it to a simmer and cook, stirring occasionally, until the liquid is reduced by half.
Put under the broiler for 10 minutes until cooked through, flipping them halfway.
To serve, pour the reduced marinade over the pork.
While the pork is marinating, prepare the rest of the meal.
Garlic Roasted Broccoli
One head of broccoli florets
2 Tbsp Extra Virgin Olive Oil
6 cloves of garlic, minced
1/4 medium onion, diced
S&P, to taste
Combine all ingredients in a bowl, then spread on a foil-lined sheet pan.
Roast at 425º about 12 minutes, or it starts to brown.
Roasted Potato Chips
Small Yukon Gold Potatoes, About 12, sliced to 1/8 inch
1/2 tsp Cayenne Pepper
1 tsp garlic powder
1 tsp paprika
1 tsp salt
Canola Oil cooking spray
Combine potatoes and dry ingredients in a bowl.
Spray the pan, then arrange the potatoes in a single layer.
Spray over the potatoes with another layer of cooking spray.
Add the potatoes to the oven at 425º with the broccoli. Flip the potatoes when they begin to turn golden brown, about 4 minutes. Remove after another 4 minutes.
