For the chicken, I just sprinkled organic chicken breasts with salt and pepper and threw them on the grill. They got all the flavor they needed from the pesto. It was so yummy and I even added it to my eggs the next morning! I served my paleo grilled chicken with romesco and pesto. The boys used the romesco to dip their polenta fries.
I also served the grown-ups a simple spinach salad with tomatoes, carrots, avocado and a basic vinaigrette. 

Cheesy Italian Polenta Fries

3/4 c cornmeal
1 3/4 c water
1/4 c parmesan cheese, grated
1/4 tsp garlic powder
1/2 tsp italian seasoning
pinch cayenne pepper
1 Tbsp butter
1/2 tsp salt

Bring the polenta and water to a boil in a small saucepan, stirring often. Cook until the polenta begins to firm up and pull away from the pan, like this:

Turn off the heat, and stir in the remaining ingredients. Spread and press polenta mixture into the bottom of a pan lined with parchment paper. Refrigerate 3 hours. 

Preheat the oven to 400ยบ and line a sheet pan with foil. Carefully remove the cold polenta from the pan by lifting the parchment. Cut the polenta into "fries." Coat the pan with cooking spray and arrange the polenta fries into a single layer. Spray all over the top of them with cooking spray or run with oil. Sprinkle with coarse salt. Bake for 25-30 minutes, or until the polenta fries are golden brown, flipping the fries over halfway through. Serve with Romesco sauce:

Romesco Sauce:

1 Roasted Red pepper
1 clove garlic
pinch cayenne pepper
1 tsp sherry
1 1/2 tsp dried parsley
1/2 tsp salt
2 Tbsp Olive oil

Whirl all the ingredients in a food processor! 

Paleo Pesto

1 c kale
1/4 c broccoli puree
1/4 c walnuts
2 tsp dried basil
1 Tbsp lemon juice
1/2 tsp worchestershire sauce
1 garlic clove
2-3 Tbsp Olive Oil
Salt and Pepper

Pulse all the ingredients (except olive oil) together in a food processor until well blended. While the blade is running, slowly add in the oil.  Serve over grilled chicken!
