CAULIFLOWER ZUCCHINI PUREE

Okay, first of all, get one of these: 


It is an immersion blender and is so incredibly useful in the kitchen. My son does not willingly eat any kind of vegetable. I use it to puree vegetables to mix into my son's food and that is almost the only way he eats vegetables. Believe me, I have tried every trick in the book when it comes to getting him to eat vegetables. He doesn't just spit them out, he projectile vomits them out. He sometimes will throw up on the kitchen floor after smelling broccoli. 

So here is a little puree I am going to try to incorporate into as much of his meals as I can this week.

Cauliflower-Zucchini Puree

1 C. Cauliflower, chopped
1/2 medium zucchini, peeled and chopped
2 Tbsp water


Place all ingredients in a microwave safe bowl. Cover with plastic wrap; poke a few steam vents with a fork. Microwave on high 3 1/2 minutes. Remove from microwave and puree with the immersion blender (or a food processor).


Store in the fridge for up to a week. Hopefully you can sneak it into all your meals this week!


You can sneak these into meatballs, soups, smoothies (you can get ALOT into smoothies without your little one suspecting a thing), eggs, meatloaf, muffins, oatmeal, mashed potatoes, etc.
