My Paleo Chicken Salad:
This is my new favorite lunch. It is so delicious, fresh and filling. It is another easy way to clear the crisper, which I am trying hard to do this week before we leave town on spring break! First off, I always start the week with hard boiled eggs. They are the perfect paleo snack, that is why I have so many here. 

 But see, I set four aside because for this recipe I only need two.
The extras will stay fresh to grab from the fridge all week. 

Paleo Chicken Salad
Serves 1 paleo mama 

Finely chop the following into uniform pieces:
2 hard boiled eggs 
(I remove the yolks only because I don't like them)
1/2 stalk green onions
1/2 stalk celery
1/4 cucumber
1/8 red bell pepper
1/8 head red cabbage
2 Tbsp Cilantro
One slice of roasted chicken breast*
*you may substitute turkey, ham, tuna, salmon, etc

Then, mash and mix up in a bowl:
1/4 avocado
1 Tbsp Spicy Brown mustard
1 Tbsp Lemon Juice
1/4 tsp garlic powder

Add the chopped ingredients to the bowl. 

Mix gently, season with 
Salt and Pepper
to your liking and enjoy!
