BEER CAN CHICKEN, CAULIFLOWER SOUP AND POTATOES

First blog post! This blog is a testament to the fact that even though each member of your family is on a different diet, you can still manage meals that easily satisfy them all. I, for one, eat Paleo. That means no grains, dairy, legumes or sugar. My husband is on a traditionally balanced and unrestricted diet of whole grains, lean proteins, dairy, etc. My son is on the traditionally kid-friendly diet of non-scary, simple foods with a very serious aversion to vegetables. I struggle every day to work them into his diet every day.

Here is how dinner looked tonight:



We all had beer can chicken (use a gluten-free beer to make it paleo) 
It was so easy! First, fire up your grill. Start with an 
organic chicken, patted dry
Rub it all over with 
olive oil.
Rub on Williams Sonoma Argentine Rub. 
Open a gluten free beer
Empty half the can at your leisure.
Shove it up the chicken. 
Stick the whole thing standing up on the grill. Cover and leave it for about an hour. It is finished when an instant read thermometer registers 160 in the deep part of the breast. 


 Next, Ranch Potatoes! Chop up a bunch of
baby red potatoes. 
Cover with
2-3 Tbsp Olive Oil
Sprinkle on
1/2 packet Ranch dressing packet
Roast in a 375ยบ oven for 40 minutes.


Cauliflower soup!
This was surprisingly delicious and it helped me clean out my crisper
Start by sauteeing 
1 onion, chopped in
1 Tbsp Coconut Oil or Butter
add 
2 cloves garlic, minced
1/2 zucchini, chopped
One head of cauliflower, chopped
2-3 cups spinach or kale. 
Let that steam and cook up a few minutes and then add 
3 c. water
1 tsp dried thyme
Salt and Pepper to taste
Bring to a boil, reduce to a simmer until all the veggies are soft. 
Using an immersion blender, puree it up. 
It is delicious as is, but we added a little bit of 
sriracha, to our liking (we add it to everything).

  1. I'm so glad I found you and this site! It's getting bookmarked and I can't wait to explore it more. I started the whole 30 yesterday and my husband and two kids thought they'd starve to death. I made the same amount of protein and veggies but with no carb side like normal. Portions were way too small:)
