Tonight we had another "clear the crisper" meal. I did go to the grocery store today, but only for tomatillos. Everything else was just in the fridge! Notice how this dinner is using leftovers from our Beer Can Chicken

This recipe starts Paleo, until the dairy starts in for Daddy's version. 

Saute the following in
1-2 Tbsp Coconut Oil
in a medium pot
1 Onion, chopped
1 Red Bell Pepper, chopped
2 Jalapenos, finely chopped
1 Poblano pepper, chopped
1 Anaheim chili, chopped

When the veggies are soft, stir in
1 Tbsp Cumin
1 Tbsp Chili Powder
1 tsp Salt
1 tsp black pepper
3 Tomatillos, finely chopped
4 Garlic cloves, minced
Juice of 1 lime

Cook about 5 minutes, stirring frequently.

Stir in
2 c Chicken, cooked and shredded
 (leftover from Beer Can Chicken)
3 Tbsp minced Cilantro

Bring to a boil; reduce to a simmer for 1 hour. 

This is the Paleo version:
I served mine with a scoop of guacamole.

To make Daddy's regular version, stir in
 2 Tbsp Sour Cream
1 oz. Shredded cheddar
 serve with some corn tortillas fried in a skillet:

I couldn't quite trick the toddler into eating any veggies tonight, though he did have a banana with dinner. I just reserved some of the shredded chicken from the soup and made him a quesadilla:
